Marrying Spanish architectural styles with Caribbean charm and fine French fare, Cap Maison Resort and Spa is a rather special boutique bolthole in St Lucia. Chef Craig Jones oversees the much-loved Cliff at Cap, a restaurant teetering high above the sea serving lip-smacking Caribbean-French fusion food; the views are just as spectacular as the menu. Then there’s The Naked Fisherman, the hotel’s beach bar-meets-eatery where you can break from sunbathing on Smugglers Cove to sip rum punch and tuck into creative takes on local classics. Another unmissable culinary experience here is enjoying a private dinner at Rock Maison, a deck set right above the sea to which buckets of champagne can be delivered to you via zip-wire – very slick indeed.
